Sauce:
1 6oz. can tomato paste
1/3 Cup apple cider vinegar
¼ Cup liquid smoke
1/3 Cup brown sugar
½ Cup water
½ tsp onion powder
¼ tsp black pepper
½ tsp ground coriander
1 tsp+ Kosher salt (you may like a little more)
splash of Tabasco sauce
Chicken:
About 4 boneless, skinless chicken breasts.
Mix the sauce ingredients and simmer together for about 1 hour. Meanwhile, cook the chicken breasts in a pressure cooker with 2 cups of water and 2 Tablespoons of vegetable oil for about 15 minutes or you can boil the chicken in the same amount of water and oil in a regular pan for about 1 hour. After the chicken is done, cut it into pieces or shred it (I use 2 large forks to shred the chicken). Then mix the chicken with the sauce and serve it on some nice wheat hamburger buns garnished with pickle slices or banana peppers.
